On the glacial moraines of Ternay, the Syrah grape reveals its strong personality in its freshness, giving us a soft, clean-tasting vin de pays.

 

Terroir

: 2 ha  -  Commune : Ternay (69) – Grape variety : 100% Syrah

Planted on hillsides facing south-west, the vines of Ternay enjoy a soil of large, rounded pebbles lying on clay. Because of their orientation, and their ability to retain heat, these soils create a particularly warm climate that produces very ripe berries.

Vinification

harvest, sorted by vine, partially de-stemmed, crushed

 Cold maceration : 4 to 5 days at 5-9°C

Alcoholic fermentation in vat: 4 to 5 days at 18-20°C at the start of fermentation, 34°C at the end

Light hot maceration

Malolactic fermentation in vat

As in the Côte-Rôtie and St. Joseph, the fermenting musts go through pigeage three times a day, with remontage at least once.  These operations allow the tannins and fruity aromatic substances to be extracted from the Syrah.

Maturing

to 8 months, 2/3 in big casks, 1/3 in barrels, being used for 4 to 5 wines

Racking : every 3 months

Maturing in big casks and barrels, which were used for making 4 to 5 wines, helps to round off the tannins and to finish the fruitness of the Syrah.
