Magnificent slope of the Côte Bellay parcel To achieve this, he regulates the vigour of his vines by exploiting high-density planting and operational methods which increase the surface of leaf exposed to sunlight. The practice of thinning out both leaves and supernumerary grapes give the berries the warm, dry environment they need to ripen and remain healthy. Using these methods on vines growing in these terroirs brings very low yields of the Syrah, Viognier and Roussanne varieties, so the berries contain all the aromatic richness of their variety and maintain a correct balance between sugar and acidity.
