Pierre Gaillard with a sample of Saint Joseph Making wine represents the most elegant expression of the strength of these soils, through the search for the optimum balance among alcohol, acidity and mellowness. Extraction of materials on Côte-Rôtie and St. Joseph gives aromatic intensity and the tannins (preferred fine) which ensure that the wines keep well. Making wine from the white Viognier and Roussanne varieties ensures a good balance among roundness, acidity and aromatic strength.
The cellar of red wines Each year, Pierre Gaillard affirms his preference for sharp fruity aromas delicately extracted by cold maceration of the reds and pellicular maceration of the whites. To meet his requirement for aromatic purity, the wines are frequently aerated, in a cellar where perfect hygiene is maintained.
The cellar of white wines The wines come into contact with oak barrels very early in their development: at the start of alcoholic fermentation for the whites and before malolactic fermentation for the reds. Pierre Gaillard thinks that the wood gives the wine another aromatic complexity, but nevertheless seeks a harmonious blend of the wood aromas with those of the wine. This harmony is improved by adjusting the percentage of new barrels in accordance with the blends of wine and the years of harvest.
