Vin de Pays Viognier comes partly from the young vines of Condrieu and Côte-du-Rhône and partly from the hillsides of Ternay; the diversity of its origins imparts its fruity balance.

 Terroir

: ~0,5 ha  -  Communes : Ternay (69), Chavanay, Malleval (42) -  Grape variety : 100% Viognier

The Vin de Pays Viognier comes partly from the hillsides of Ternay, which face southwest.  The soil consists of large, rounded pebbles, which, because of their ability to retain heat, produce very ripe grapes.  Its other origin lies in the young vines of Condrieu and Côte-du-Rhône, which do not yet have appellation.  On these noble granite hillsides, the young Viognier expresses its personality with great strength.

Vinification

harvest when the grapes are ripe (12-14 degrees), strict sorting of very ripe berries

Pellicular maceration: 12 to 18 hours

Alcoholic fermentation in barrels :  the temperature is controlled at 15-18°C

Malolactic fermentation in barrels

The grapes are vinified following the same regime as the Condrieu grapes: the musts are fermented in barrels after going through pericullar maceration to allow the full aromatic expression of the Viognier berries.

Maturing

months, 10% new wood, finely grained oak from Allier and Nevers, 

Batonnage : once a week

The lees are kept during the maturing process, and, with regular pigeage, they allow the natural Viognier body and smoothness to be achieved on this terroir.
